Banana & Cranberry Baked Breakfast Bites

A couple months ago my friend Rachel sent me a recipe that she uses to make breakfast “cookies,” especially for her kids on busy mornings. And we allll know the need and desire to have something as a grab-n-go while you are heading out the door- especially in the mornings.

Side note: There’s a few things you should know about me…

  • I love to bake.
  • I almost always try to take a recipe and figure out ways to AMP UP the nutrient factor to make it healthier.
  • I rarely follow a recipe with exact measurements after the first time.
  • I tweak recipes as I go.

So based on those simple things about me and while using Rachel’s fabulous recipe, I got a-bakin’ and added only minimal additional ingredients but it helped boost more nutrients that can be easily disguised.

Oatmeal is packed with soluble fiber and protein that it’s the most perfect addition to anything! It is a big boost for heart health and it can lower your blood pressure.

These are the three powerhouses in this recipe. So when Rachel shared with me her awesome original recipe, I did my usual thing (note above) and tweaked it so it’s awesomeness remained- but now with more nutrients.

Banana & Cranberry Baked Breakfast Bites

Ingredients:

  • 2 bananas
  • 1 cup quick oats oatmeal
  • 1 t. cinnamon
  • 1/4 cup dried cranberries
  • 1/8 cup semi sweet chocolate chips

Process:

Now hang tight, it’s rather complicated!

Mix it all together. Yep, that’s it! Mix it all together and then scoop into little balls for baking. Bake at 350 degrees for 15-20 minutes.
